Controls and quality

Traceability and retraceability

The Besana Group has developed a traceability and retraceability system for the entire food chain. From the "Field to the Fork".

An individual code identifies the product through all production processes while in parallel our IT system guarantees and records any information regarding raw material, production processes, controls and final transport.

Haccp and critical points

The Besana Group applies a self audit system for food safety, based on H.A.C.C.P. principles and European regulations going even more deeply into specific controls.

The critical points for every single production process are under constant control through a monitoring system.

The controls are the following:

- Visual controls at all production stages by skilled operators to remove eventual defective products and to alert on unsatisfactory hygiene conditions of equipment, premises and transport;

- Controls during process using specific instruments for temperature and humidity checks in chilled rooms (thermohygrometer), temperature checks in roasting ovens, detection of presence of foreign bodies (metal detector and ultrasound selection) and of discoloured product (optical selection);

- Quality controls evaluating aspect, texture, colour, flavour and taste of the product to guarantee it is in line with standards and with consumer expectation;

- Physical, chemical and microbiological analyses on raw materials, semi-processed goods and final products. Further microbiological controls are carried out to verify hygiene conditions of production areas, equipment and personnel, as well as on the water used during production.

Particular attention is also paid to specific analyses as mycotoxines, pesticides and allergenic proteins to guarantee to the final consumer a healthy high quality product with full respect of the environment and health and safety regulations.

After analysis of the final product, the Internal Food Laboratory releases a Quality Certificate which approves the product for distribution to the industry and to the final consumer.
